सर्दियों का मौसम खाने-पीने का मौसम होता है. इस मौसम में मिलने वाले अनाजों को मिलाकर आप एक अलग सी रोटी बना सकते हैं, जिसे खूबा रोटी कहा जाता है. इसे आप घी और गुड़ के साथ गरम-गरम खा कर देखिए, सर्दियों का मज़ा दूना न हो जाए तो कहिएगा.
मल्टीग्रेन खूबा रोटी
सामग्री
• 2 टेबलस्पून बाजरे का आटा
• 2 टेबलस्पून रागी का आटा
• 4 टेबलस्पून मक्के का आटा
• 2 टेबलस्पून ज्वार का आटा
• 1 कप गेहूं का आटा
• 2 टेबलस्पून कसूरी मेथी
• 1 टीस्पून अजवाइन
• 2 टेबलस्पून तेल
• गर्म पानी (आटा गूंधने के लिए), आवश्यकतानुसार
• नमक, स्वादानुसार
• 2 टीस्पून घी
विधि
1. एक बड़े मिक्सिंग बोल में ऊपर बताया गया हर तरह का आटा, अजवाइन, तेल, कसूरी मेथी और स्वादानुसार नमक मिलाएं.
2. इसमें थोड़ा-थोड़ करते हुए गर्म पानी डालकर थोड़ा सख़्त, लेकिन पूरी के आटे से मुलायम, आटा गूंध लें.
3. इसे 15 मिनट के लिए अलग रख दें.
4. इसकी छोटी लोइयां बनाएं. अब एक लोई को आधा इंच मोटी रोटी में बेलें. चाकू की सहायता से रोटी की सतह पर गहरे छेद बना लें.
5. अब इसे पलटें और चिमटे की सहायता से दबाते हुए मनचाहे आकार का पैटर्न बनाएं.
6. अब धीमी आंच पर इस रोटी को दोनों ओर से अच्छी तरह सेक लें. जब यह सिक जाए तो इसे कुरकुरा बनाने और अच्छी तरह से सेकने के लिए सीधे ही आंच पर रखकर भी सेकें.
7. घी लगाकर सर्व करें.
